Berry compote with smoked butter and sweet herbal juice

Summer dish

Ingredients for four servings:
200-300 ml mixed berries: blueberries, raspberries, cranberries or cloudberries
1 handful of meadowsweet (alternatively wild mint or water mint)
100 g butter (standard or vegan)
3 tablespoons sugar (alternatively honey)
200 ml fresh spring water
Salt

Preparation:
1. Make a campfire and rinse the berries.
2. Put the butter in a small saucepan and melt it over the heat.
3. Using tongs, carefully remove a piece of glowing coal or twig from the fire and place it in the melted butter. Remove from heat and let it steep for 5 minutes.
4. Heat the butter again and pour it through a sieve into a bowl.
5. Add 2 tablespoons of sugar, meadowsweet, and a pinch of salt to the water and bring to a boil. Set the juice aside and let it cool. It should be drunk chilled.
6. Pour the juice through a sieve into glasses.
7. Heat 1 tablespoon of sugar until golden brown.
8. Add the berries and heat.
9. Fold in the smoked butter and serve.
