Pancakes with berries

Ingredients for 4 pancakes:

Pancake batter:
100 g wholemeal spelt flour
1/4 tsp baking powder
150 ml milk
3 eggs
some salt
4 tbsp Alba oil

Filling:
400 g fresh berries, e.g. strawberries, blueberries, raspberries, blackberries
1 tbsp red jelly
1 tbsp powdered sugar for sprinkling

Preparation:
Combine wholemeal spelt flour with baking powder and whisk with the milk. Let the dough rest for a while so the wholemeal flour can swell sufficiently. Add the eggs and salt and mix.
Add a little Alba oil to a nonstick pan and cook four pancakes on both sides over low heat. Keep the pancakes warm in the oven.
Carefully fold the fruit into the jelly. Fill the pancakes with the berry mixture and sprinkle with powdered sugar, preferably while still slightly warm.
