Pan bread, flatbread, or gáhkku – the Sami hot cake has many names. Baking bread in a pan or on a Muurikka (a pancake) is a warming and surprisingly simple way to cook. This bread is a great accompaniment to stews, soups, or grilled skewers.


Ingredients:

500 g wheat flour (approx. 8 dl)
1 tsp salt
2 tsp baking powder
3 dl water
2 tbsp melted butter or margarine



Preparation:

Prepare the dough: Mix the wheat flour, salt and baking powder in a large bowl.
Add liquid: Add water and melted butter or margarine.
Knead the dough: Mix all ingredients until a smooth dough forms. Add a little flour if the dough is too sticky.
Rolling: Divide the dough into 4-6 portions, depending on the desired bread size. Roll each portion into a thin flatbread about 0.5 cm thick.
Baking: Heat a dry frying pan over medium heat. Place the flatbread in the pan and bake for a few minutes on each side until golden brown and cooked through. For a more authentic taste, the bread can also be baked over an open flame.
Serving: Serve Gáhkku warm, ideally with butter, cheese or as a side dish to a delicious soup.
