Fried salmon slices on leek vegetables

Cooking with Alba oil

Ingredients for 4 servings:

200 g potatoes, peeled and halved lengthwise
2 medium-sized leeks, cleaned and washed
4 salmon fillets, each approx. 180 g
4 tbsp Alba oil
2 tbsp freshly chopped herbs,
e.g. parsley and chervil
Cumin, ground
Salt and freshly ground pepper

Preparation:

Cook the potatoes in well-salted water.
In the meantime, cut the prepared leek into leaves or diamonds.
Heat 1-2 tablespoons of Alba oil in a non-stick pan and fry the salmon slices for 2 minutes on each side. Season with salt and freshly ground pepper. Then remove the fish from the pan and keep warm, covered.
Drain the cooked potatoes and let them cool. Heat another tablespoon of Alba oil in the fish pan and fry the potatoes until golden brown on all sides. Finally, add the chopped herbs to the potatoes and toss everything together.
Heat the remaining Alba oil in a pan and sauté the leek for 3-4 minutes. Season with salt and a pinch of cumin.
Arrange everything together on preheated plates and serve with chilled white wine spritzer.
