Vegan cooking with Alba oil

Ingredients for 4 servings:

1 kg asparagus
2 tbsp Alba oil
salt, black pepper
10 black olives
some lettuce leaves or arugula

Preparation:

Peel the asparagus and cut into bite-sized pieces.
Pour the oil into a wide, non-stick pan and fry the asparagus for about 15 minutes over medium heat, turning frequently.
At the end of the cooking time, the asparagus should be golden brown and still have a bite.
Cut the black olives into fine rings and stir them into the asparagus.
Season generously with salt and pepper and arrange the warm asparagus on the salad.

Tip:
For a non-vegan preparation, if you like it a little sweet, you can add 1 to 2 teaspoons of spicy honey to the warm asparagus.
