"There are probably few words that have become as synonymous with all of Scandinavia as smörgåsbord. Literally translated, "smörgås" means bread and butter, and "bord" means table, and this sober Swedish translation has something charming about it. Traditionally, the term in Sweden refers to a hearty meal at a lavishly laid table, in the spirit of typical husmanskost, or home cooking. The classic smörgåsbord includes Swedish whole-grain bread, a selection of salted, smoked, and pickled fish, regional cheeses, and meatballs, as well as usually one or two comfort desserts to share.

Only recently, the smörgåsbord has undergone a new, modern interpretation. The hearty dishes that once served to feed the workers who spent 18 hours a day in the fields harvesting crops or building cabins in the forest have become relics of the past. Instead, large bowls of crisp leaf salads, pickles, and grilled seafood are served.
This new style of hospitality has a refreshing lightness; dishes made with seasonal produce pay homage to the multitude of mezze, tapas, and other communal dishes that are at home in many cultures around the globe. Anything festive or formal is absent.

The younger generation prefers simple, unpretentious invitations. Gathering with friends and enjoying a cozy meal together is paramount. The beauty of this new type of smörgåsbord is the combination of the best Scandinavian style and a lack of affectation with the greatest possible flexibility for the host.
