Skyrnaise - Homemade 'mayonnaise' with Skyr

An interesting alternative

Ingredients for approx. 4 servings of dip:
1 egg yolk
2 tbsp vinegar
80 ml rapeseed oil
250 g Skyr
1 teaspoon sugar
1 tsp mustard

Preparation:
Carefully mix the egg yolks with the vinegar in a tall mixing bowl.
Then add the oil slowly and carefully while stirring constantly.
Fold in the skyr and season the whole mixture with sugar and mustard.
Chill the finished "skyrnaise" and serve as a dip, for example with fish and chips.
